Cottage Cheese Toast

TikTok really put the hard sell on cottage cheese toast. I was VERY skeptical. I have very few food aversions and cottage cheese was always one of them. For the record, the full list of foods on my no no list includes: raw red onions, fruit in savory dishes, whipped cream by itself (the texture just won’t go down), and tripe (I don’t mind the concept – it doesn’t werid me out – and love the flavor, but, again, it’s a texture thing). But after watching video after video of people praising cottage cheese on toast (“even if you hate cottage cheese”), I figured it was worth spending $4 to find out if my mind could be changed. And, indeed, it has. Not only did I love cottage cheese toast, it has become my new hyperfixation meal. I’ve eaten this for lunch every day for weeks on end.

A big caveat: from what I’ve gathered, you MUST use the Good Culture brand. Literally nothing else compares. For flavor, sure, but mostly due to the texture. It’s not watery and is almost like a ricotta. Just wayyyy lower cal. Also, the base should be high crunch. That’s why I always spread it on toasted sourdough or, recently, inside a little bell pepper boat.

When it comes to toppings, I’ve had fun. First thing’s first: spread a very extra generous portion on your toast. Then top with any combo of fun things. I’ve used avocado, heirloom tomatoes, a fried egg, truffled balsamic vinegar, leftover veggies, pine nuts, and chili crisp. Some flaky sea salt finishes it all off. I’m freaking obsessed.
